It actually affects the stability of the bike. But only on the return trip.

I had occasion to put a prize bottle of wine in my bidon cage wrapped in an arm warmer. This worked quite well over, despite riding over the roughest 4km of road ever. Not as elegant it must be admitted.

I was once riding home with a bottle of wine in the pannier, and I had a collision with a vehicle, I think that I pretty much went right over the front wheel, and having clipless pedals, I think that the bike followed me.

Bottle survived better than me and the bike.
